Some people cannot eat wheat flour because of allergies.
Someone has diabetes and is cutting back on sugar.
There are people who want to eat less fat and more protein before competitions.
There are more and more vegans as well as vegetarians. …… And so on.
But,still in Japan, in a place where “everyone” gathers to eat, someone often has to hold back.
And EPICURE’s owner-chef Koji Fujiharu wondered about this.
He wanted to create a place where everyone could gather around one table with a smile on their face.So, He created the idea of “Caring Food” to address the diversity of food,and open the restaurant EPICURE in Tokyo 2014.
